Introduction

Dumpling, a symbol of reunion and richness, has played an important role in Chinese life since ancient times. In China, dumplings can be a must-have food for any major festival. There is also a saying that goes' go out, dumplings, come in, noodles'. Eating dumplings outside symbolizes reunion and peace.

Make

  • He Mian
    Take about half a pound of flour and pour it into a bowl. Add water and knead it into dough (note the water to dough ratio to make the dough slightly softer)
    Cover the dough with a lid and let it sit for about an hour. Rub it again, cover it, and let it sit for about half an hour

  • Making meat filling
    Chop the pork (or beef or sheep) and put it in a bowl
    Take a chopped scallion and put it in a bowl
    Take a piece of ginger, crush it, and put it in a basin
    Pour in thirteen fragrant oils, vegetable oils, light soy sauce, dark soy sauce, and one egg salt
    Mix the pork filling and ingredients evenly with chopsticks and marinate for over half an hour

  • Making vegetarian filling
    Chop the cabbage into small pieces
    Add a little salt and sprinkle it evenly on chopped cabbage. Stir well and let it sit for half an hour. Marinate with water
    Squeeze out the water with a cloth and put it into a basin

  • Mix vegetarian and meat filling
    Mix the prepared meat filling together and stir evenly to prepare the dumpling filling for later use

  • Making dumpling wrappers
    Sprinkle flour on the board, take a portion of the mixed dough and knead it into the thickness of a banana. Cut it into small tangerine sized pieces with a knife
    Use a rolling pin to roll the dough cut into orange sized pieces into a palm sized dumpling wrapper

  • Making dumplings
    Put the dumpling filling into the dumpling wrap and make it look like a gold ingot

Dumpling dipping sauce

  • Dip: Dumplings, vinegar soy sauce, garlic cloves made into garlic paste 
  • Chili oil: Heat an iron pot and add cooking oil until 8 minutes hot. Add chopped chili peppers and pour them into a bowl (note that the chili peppers are in the middle of the paste or not)

Boiled dumplings

  • Add water to a large pot and bring to a boil over high heat 

  • Add the wrapped dumplings to boiling water while stirring with a spoon to prevent sticking to the bottom of the pot 

  • After boiling, pour in half a bowl of water and wait for it to boil. Repeat this process for a total of 3 times, take it out and eat it with dipping sauce
